Are you seeing this in any particular device and iOS combination?
This could be due to the fact that the menus have a "frosted glass" effect so depending on how heavy the scene is there could be a small impact as their bg is redrawn so the menu needs redrawing, when the battery saver mode is enabled their bg is only redrawn when absolutely needed so it may not happen.
To be honest, the only reason for battery saver mode to not be the only option is that I noticed that when on, screen recordings would occasionally have some weird artifacts so I needed to leave the mode option at least for recording videotutorials, this shouldn't be needed for timelapses as these artifacts are only visible under circumstances that videotutorials tend to trigger (long periods of time where nothing actually changes on screen which leads to weird intra-frame compression artifacts in the recorded videos). Through testing we've found that simply "doing something" that triggers a refresh like opening/closing a menu seems to be enough to avoid artifacts which can be easily cut out in an editing software later and does not require a camera movement that would make the video appear to be missing frames. (This was all tested on iOS13, not sure if it's still the case on iOS14)
